The Consorzio del Balsamico di Modena manages the production of all balsamics worthy of the title, “Tradizionale Balsamico di Modena”. By  law, only these rare vinegars are authorised to use these unique bottles designed by the Consortium.

 

Faithfully married to their land for many generations, the Fiorini family produces some of the finest of balsamic vinegars of Italy – a noble elixir drawn from a special combination of climate, terroir and hard work. It all started with some small wooden barrels brought by the great-great-grandmother as dowry on the occasion of her marriage more than 100 years ago. It was then that the Fiorini family started to grow its own vines on this land, producing grapes to transform into the traditional balsamic vinegar of Modena. Giuseppe Fiorini, like his forefathers, was a master in the selection of the best woods for storage barrels, such as juniper, durmast oak and cherry. He was also an expert at choosing the best grapes, as well as in all of the production phases, including the art of decantation.

Seasons pass quickly, but the Fiorini traditions and their passion for the art of creating this gem of nature remain unchanged. The balsamic vinegar of Modena is produced with patience and careful control, from the grapes to the final product. “To get the best things it takes time. Time marks the natural rhythm of the seasons. You can neither control it nor even master it. However, if you act in its respect, then it will respect your work.” More than 100 years ago, the Fiorini family started to grow its own vines on this land, producing grapes to transform into the traditional balsamic vinegar of Modena.
